Onions pickled in vinegar for winter

Description

Perfect for winter pantry stocks. This kind of vinegar-marinated onion for winter is easy to make at home. How you use it is entirely up to you, since the possibilities are very broad. Some people like to eat it with bread; many like to serve it with salted fish. I often serve this onion with stewed or roasted meat. In short, there are many options—try it and find your own. Jars keep for up to a year in a cool place.

    1. Peel the onion and wash it thoroughly. Pour over the juice of half a lemon and add one teaspoon of salt. Add enough water to cover the onion. Refrigerate for 24 hours.

    2. Prepare the marinade. Pour one and a half cups of water into a (non-reactive) saucepan, add bay leaf, pepper, half a teaspoon of salt and a full teaspoon of sugar. Add the vinegar as well. Bring to a boil, put the onions in the saucepan. Simmer on low heat for 10 minutes.
