Pickled Peppers for Winter

Description

Winter preserves are a real lifesaver, because if you think about it, no winter holiday goes without them. And indeed, when you are expecting guests but have no time to cook, you can simply put such a little pepper on the table, slice some sausage and cheese, and your treat is ready. I have many different recipes for making marinated peppers for winter, but I want to share with you my favorite one, in which we will use tomato paste. It is an excellent combination, and the peppers turn out very tasty and beautiful; my family and guests adore this dish. So if you do not know yet, store in a cool, dark place.

    First of all, we need to prepare the vegetables. Remove the seeds from the peppers and rinse them; clean the garlic as well.

    Now cut the pepper into thin strips and slice the garlic into thin rounds.

    Pour water into a saucepan and mix it with tomato paste. Add vegetable oil, salt, and sugar to taste, and mix everything together.

    Place over heat, pour in the vinegar, and simmer for a couple of minutes after it comes to a boil. Then add the pepper and garlic to the pot.

    Together with the peppers, add the roots and spices and simmer everything for 10 minutes; at the end, add bay leaf and herbs if you like. Remove from the heat, pack the peppers into sterilized jars, pour in the marinade (not all the way to the top), seal the jars, and turn them upside down. Wrap in a blanket and leave for 24 hours, then move to a cool place.
