Pickled Onions in Jars for Winter

Description

Perfect for winter pantry stocks. This recipe for jarred pickled onions for winter will let you make a juicy, tasty appetizer. I usually serve these onions with meat dishes or add them to salads—I don't dare eat them plain, though they're very healthy and delicious. So I recommend making this preserve even if you don't consider yourself an onion lover. Serve at the table or store in the pantry.

    1. Sort through the onions, peel and wash them. Blanch in boiling water for 3–4 minutes, then rinse with cold water. This will remove the bitterness. Leave in a colander to drain the water.

    2. Make the marinade. Add minced garlic, bay and oak leaves, cloves, pepper, sugar, and salt to the water. Bring to a boil, add minced dill and vinegar. Stir and remove from the heat.

    3. Pack the onions into sterile jars and pour hot marinade over them. Screw on sterile lids.

    4. Store upside down under a blanket until completely cooled, then move the jars to the cellar or pantry and keep until winter. Done!
