Pickled Onions

Description

Perfect for the table and with drinks. Making pickled onion is quick and easy. The onion ends up soft and crisp, and its flavor takes on a new, interesting note. Pickled onion keeps well and can become part of your favorite dishes. It pairs wonderfully with various meat dishes, salads, burgers, and even on its own as a snack. If you want to use regular yellow onion but give it color, add a little turmeric or beet juice to the marinade. Can be served warm or chilled.

    Prepare all the ingredients needed to make pickled onion. Peel and rinse the yellow onion.

    Cut the onion into medium half-moons.

    Lightly salt the onion.

    Add sugar to the vegetable, mix, and gently knead with your hands without breaking the onion.

    Pour vinegar over the onions and cover everything with hot water so it covers the half-rings. Stir and let stand for 10 minutes. Then drain the onions in a colander and let the liquid drain off; keep the liquid—it may come in handy.

    If you don't use all the onion at once, place it in a clean dry jar and pour the marinade over it. Seal the jar with a lid and refrigerate for 2–3 days.
