It keeps beautifully in the refrigerator for about a week, though it rarely lasts that long—it gets eaten with boiled potatoes or on its own as a snack with a shot of vodka.

Mix the salt and sugar, coat the carp fillets with this mixture on both sides, and place them on a plate. Cover with plastic wrap and refrigerate for at least 24 hours and up to 2 days. Turn the fillets over each day for even curing.
