
Marinated crucian carp
Description
The appetizer is prepared quickly and simply. For marinating, you only need fresh fish you can trust. Thawed fish is out of the question! To marinate, scale the fish, trim off the tails and heads, and rinse the insides thoroughly to remove any blood residue and dark membranes. Marinate in vinegar, then in oil with fresh and pickled onion; add salt to taste, along with any other spices you like. You can vary the flavor with spices such as coriander and dry mustard seeds. I usually add only bay leaf, two kinds of pepper, and salt. Serve the appetizer at the table.

Prepare the ingredients. For marinating, you need only the freshest fish! Wash the crucian carp, remove the scales, gut them, and remove the black membranes inside.

Cut the fish into pieces 1.5–2 cm thick. Remove the fins and tails. Do not marinate the heads. Place in a tall, convenient glass or enamel container.

Cut the onion into half-moons, add to the fish, and mix.

Pour vinegar and water over the crucian carp.

Place a weight on top (a small plate and any container on top). The fish should be completely submerged in vinegar; if there is not enough liquid, add more vinegar and water. Let marinate for 1 hour at room temperature.

After an hour, drain the fish in a colander or sieve. Leave for 10–15 minutes so as much liquid as possible can drain off. Do not rinse.

Cut two fresh onions into half-moons. On the bottom of the container in which you will marinate the crucians (glass, enamelware, or stainless steel), lay a little fresh onion, then a layer of fish, pickled onion, salt, and spices. Continue alternating layers, sprinkling each layer of fish with a pinch of salt, spices, and pickled and fresh onion.

On top, add a layer of onion and spices. Pour vegetable oil over the fish. Place the container in the refrigerator for 24 hours. After one to two days, the marinated crucian carp will be fully ready. You can transfer the fish in oil and onion to a glass jar, seal with a lid, and store in the refrigerator for up to a month.
