Prepare the specified ingredients.

Clean the fish of scales, remove the entrails, and wash it inside and out. Cut off the heads, fins, and tails. Wash the carcasses again and cut them into serving-size pieces. Place the prepared fish in a deep container.

Peel the onion, rinse it in water, slice into half-rings, and add to the container with the fish.

Add salt and ground black pepper, pour in vinegar and odorless vegetable oil.

Thoroughly mix everything in the container with light pressure so the marinade coats every piece. Protein denaturation in the flesh will begin immediately — white flakes will form. This is normal. Place the container in the refrigerator for 2 days, stirring its contents about 2–3 times a day. You can transfer the preparation to a jar or lidded container to keep fish odor out of the refrigerator.
