Marinated pepper

Description

The ingredient amounts are calculated for a 250 ml container. As the small peppers are extremely hot and bitter, handle them carefully — it's best to wear rubber gloves. They are marinated in vinegar with sugar so that when tasting you experience the full range of flavors: bitter, sour, and sweet-salty. Remember that bitterness should be chased not with water but with cold milk, kefir, or any other dairy drink. Store in a cool, dark place.

    Prepare the specified ingredients. Wash the peppers, cut off the stems, and peel the garlic cloves.

    In a separate container, mix salt, granulated sugar, and black peppercorns (not allspice). If desired, you can also add other spices and seasonings.

    Prepare a clean, washed jar or another glass container. Pour half of the spice mixture onto the bottom.

    Add half of the garlic cloves and the devil peppers. If the cloves are large, cut them in half or slice them.

    Sprinkle in the remaining spice mixture, arrange the garlic cloves, and pour 6% vinegar over everything. Do not add vegetable oil!

    Screw the lid onto the jar and shake everything thoroughly until the sugar dissolves. Place the container in the refrigerator and leave it for 2–3 days. Shake the container with the peppers every day. After this time, you can try the snack. The peppers will keep very well refrigerated in the marinade for at least six months!

    If desired, you can prepare several jars like this with pickled devil pepper. Remember, the smaller the peppers, the hotter they taste. Enjoy your meal!
