Step 1

Prepare the listed ingredients. Boil the chicken eggs in advance for 15 minutes and cool them in ice water. If desired, you can replace them with quail eggs, boiling them for approximately 5–6 minutes and cooling them.

Step 2

Add all the listed spices and seasonings to a pot or cauldron, except for the hot red pepper. If desired, you may omit it. Pour in hot water and bring everything to a boil, placing the pot on the stove. Turn off the heat and cool the brine to 30–35 degrees. Pour in the vinegar and stir.

Step 3

Peel the hard-boiled chicken eggs and rinse them in water so that not even a speck of shell gets into the jar.

Step 4

Place the chicken eggs in a jar and pour warm marinade over them. Screw on the lid or seal the jar with a plastic lid. Refrigerate for at least 2–3 days, shaking the marinade each day for even flavoring of the appetizer.

Step 5

After the specified time, taste the appetizer. If you want a bolder flavor, marinate the eggs for about 4–5 days. The appetizer will keep in the marinade for up to 1 week.
