
Korean-Style Marinated Mushrooms
Description
Winter preserves made at home. Why buy pickled mushrooms when you can make them yourself? And you can serve them at the table or keep them in the pantry.

Wash the mushrooms, place them in a pot, cover with water, and add salt. Bring to a boil, then cook over medium heat for 20 minutes.

While the mushrooms are cooking, prepare the marinade. In a deep bowl, mix vegetable oil, soy sauce, and vinegar. Then add finely chopped parsley, cilantro, black pepper, bay leaf, minced garlic, and finely chopped hot chili pepper. Stir to combine and salt if needed.

Toast the sesame seeds in a dry skillet. Stir constantly—the sesame seeds cook very quickly!

Add toasted sesame to your marinade.

Transfer the cooked mushrooms from the pot to a bowl with the marinade.

Mix the mushrooms with the marinade, cover the bowl with a lid, and refrigerate overnight (at least 8 hours). Stir the mushrooms once or twice during this time. The mushrooms are ready.
