
Marinated Honey Mushrooms with Cinnamon

Sort through and rinse the honey mushrooms, place them in a pot, cover with water, and boil for 20 minutes, skimming off the foam; then drain the honey mushrooms in a colander.

Pour a liter of hot water into a clean pot, add the spices, salt, and sugar, and place the pot over heat. Bring the liquid to a boil and add the mushrooms. When the water comes to a boil a second time, add the vinegar essence and cook everything for 3–5 minutes.

Spread the mushrooms into sterilized jars and seal them tightly with lids. Turn the jars upside down onto their lids, cover with a warm blanket, and let them cool; then move them to the cellar or another cool place.
