
Pickled Honey Mushrooms with Cloves

Sort through the mushrooms to remove any debris and rinse them thoroughly in several changes of water.

Transfer the honey fungus to a small saucepan and pour in enough water to almost completely cover them. Cook the mushrooms for 45 minutes.

Then drain the honey mushrooms in a colander.

Now arrange the mushrooms in the sterilized jars; they should fill about two-thirds of each jar. Then prepare the marinade from water, salt, sugar, and spices, adding vinegar and citric acid at the end. Fill the jars completely with the prepared marinade.

After that, line the bottom of a wide pot with a towel, place the jars on it, cover them with their lids, and pour water into the pot; it should reach the necks of the jars. Sterilize the mushrooms in the jars for 35 minutes for half-liter jars and 45 minutes for liter jars.

After sterilization, seal the jars, turn them upside down, and let them cool. Then move the mushrooms to a dark, cool place for storage.
