
Pickled mini peppers with cheese

Prepare all the ingredients.

Wash the peppers, cut off the stems, and remove the seeds.

Add sugar and salt to hot water and stir. Add a couple of garlic cloves, a bay leaf, hot chili pepper, and allspice berries. Pour in the vinegar and olive oil. Bring to a boil.

Add the peppers to the marinade and simmer for 3–4 minutes, then remove from the heat. Cover with a lid and leave the peppers in the marinade for 10 minutes. Then transfer the peppers to a plate and let them cool. Cool the marinade completely as well.

For the filling, mix the cream cheese with Italian herbs and minced garlic. If the cheese doesn’t seem salty enough, you can add salt to taste.

Fill the peppers with the cheese filling. It is easier to do this with a disposable pastry bag, but you can also use a small spoon.
