
Marinated Honey Mushrooms in Oil
Description
Homemade preserves keep for a long time. Butter mushrooms pickled in oil are a super delicious preserve that will beautifully complement any dish. When preparing butter mushrooms pickled in oil, it is very important to remember that you must never use iron lids for sealing the jars. Butter mushrooms pair very well with boiled potatoes and meat dishes. The mushrooms are also indispensable as a snack with chilled vodka. At all big celebrations, when we get together in a large group, my pickled butter mushrooms are the signature dish of the festive table and are very popular, especially among the men :) But on weekdays too, butter mushrooms are a fine addition to main courses. To prepare this preserve, you need to boil a marinade for the mushrooms. Make the marinade using your usual recipe, adjusting the amounts of dill, allspice, bay leaf, garlic, cloves, salt, sugar, and vinegar. You should end up with about 1 liter of marinade in total.

The mushrooms need to be covered with cold water for 1 hour (this makes them easier to wash), then clean the mushrooms with a sponge in cold water and cut into 2–4 pieces (depending on the size of the mushrooms).

Then boil the butter mushrooms in salted boiling water for 15 minutes. Be sure to put an onion bulb in the pot to check whether any of the mushrooms are poisonous. If the onion darkens, it means there is a poisonous one among the mushrooms — discard all the mushrooms!

Then rinse the mushrooms under cold running water.

Then add the mushrooms to the pre-boiled marinade and boil them for 10 minutes.

Pour the butter mushrooms with marinade into pasteurized jars, adding one tablespoon of oil to each. Then seal the jars and let them cool.

Then store the marinated butter mushrooms in oil in the refrigerator.
