
Pickled chanterelles with onion
Description
A preservation recipe without unnecessary fuss. I’d like to share a simple recipe for marinated chanterelles with onion. Prepared this way, they keep in the refrigerator for about a month. Chanterelles make a great appetizer with cheese dishes, as well as with potato and meat dishes. Good luck making this treat.

Wash the mushrooms and pat them dry; slice the largest ones.

In a pot, bring 2 liters of water to a boil, add 1 tsp. salt and lemon juice, then cook the mushrooms in this water for 5 minutes after it reaches a boil. Place the mushrooms in jars for marinating.

Bring the vinegar to a boil with water added (100 ml vinegar to 100 ml water).

Add finely chopped onion and garlic, lemon pulp, and spices (bay leaf, peppercorns, coriander) to the marinade.

Now add butter and salt to taste. Boil for 5–6 minutes.

Pour the boiling marinade over the mushrooms and close the jars. Let cool and store in the refrigerator.
