
Pickled chanterelles with garlic

Prepare all the ingredients.

Sort through the chanterelles and rinse them thoroughly in water several times to remove all dirt.

Large mushrooms can be cut into several pieces, while small ones can be left whole.

Transfer the mushrooms to a pot, pour in water, and bring to a boil. Cook for 20 minutes over medium heat. Skim off the foam with a spoon.

Then drain the mushrooms in a colander and rinse under cool water.

And strain the mushroom broth in which the chanterelles were cooked through several layers of cheesecloth. Measure out 500 ml of mushroom broth and pour it back into the saucepan.

Add salt, sugar, peppercorns, and cloves, as well as peeled garlic sliced into thin slices. Bring to a boil.

Add the washed chanterelles back to the pot. Cook for 5 minutes, and pour in the vinegar at the end.

Place the mushrooms in a clean sterilized jar.

Pour in the hot marinade.

Seal the jar tightly, turn it upside down, and wrap it in a towel. Leave it that way until completely cooled.
