
Marinated Squid
Description
Perfect for the table and with drinks. But be careful — this dish needs to be prepared in advance, at least a week ahead. Below I have described it. Serve with greens and sauce.

Wash the squid. Cut off the tentacles and remove the innards and membranes.

Cut the body into 1-centimeter-thick rings; leave the tentacles untouched.

Bring the water to a boil with a bay leaf. Then lower the squid into it. Cook for 5 minutes. Then drain the water.

Put 300 ml of water for the marinade over heat. Add oregano, bay leaf, peppers, salt, and coriander. Bring the liquid to a boil. Let it stand for 15 minutes, then combine with vinegar. Stir.

Pack the squid tightly into a sterilized jar. Pour the marinade over them and add 2 tbsp. oil. Seal with a lid and refrigerate for one week.

After that, drain the marinade, add the remaining oil and chopped cilantro. Mix the ingredients.

Sprinkle the prepared marinated squid well with lemon juice. Enjoy!
