
Pickled Mushrooms for Winter

Prepare the mushrooms: rinse them. At the root end, trim the stem to make it neater. Stems that are too long should be trimmed short.

Prepare all the spices. They can be combined.

Place the mushrooms in a saucepan and cover them with water. It may seem like there isn’t enough water, but as they cook, the mushrooms will release their juices—and there will be more liquid. Simply boil the mushrooms in water for 15 minutes.

Add salt, sugar, spices, bay leaf, and vinegar. Simmer for another 5 minutes. Stir well. Turn off the heat. Pack the mushrooms into jars and cover with the brine. Seal the jars. Turn them upside down, wrap them, and let cool. Once the jars are cool, return them to the upright position. Store in a dark place until you crave delicious mushrooms. Open and enjoy.
