Pickled Mushrooms for Winter

Homemade preserves keep for a long time. Personally, I simply adore pickled mushrooms. They pair well with any meat dishes and side dishes. They’re also handy to add to salads. So I’m sure you’ll like this recipe for pickled mushrooms for winter! Mine turn out with a rich flavor—tangy and salty. But if you prefer milder combinations, use less vinegar, sugar, and salt. Good luck. Store in a cool, dark place.

    1. Wash the mushrooms thoroughly, removing any fine debris. Drain in a colander.

    2. Bring the specified amount of water to a boil with the sugar and salt. When both the sugar and salt have dissolved, add the pepper and bay leaf. When it comes to a boil, pour in the vinegar, add the mushrooms, and reduce the heat.

    3. Simmer for one hour over low heat. Meanwhile, sterilize the jars and lids. Pack the cooked mushrooms into the jars and seal them for winter storage.
