
Pickled Cherry Tomatoes
Description
A simple canning recipe with no extra fuss. Ingredient amounts are for 2 jars of 500 ml each. Use round or elongated fruit as you like; either way they will be very tasty and juicy. Taste the marinade before pouring so it is not too sour or salty; then the tomatoes will absorb it well. Store the preserves in a cool place if possible, or in a pantry in the apartment if it is dry and dark. Serve at the table or keep in the pantry.

Prepare the listed ingredients. Choose cherries without damage so they do not spoil the preserve and it does not swell during storage.

Pour them into a salad bowl or a bowl, cover with cold water, and rinse off dust and dirt.

Wash the jars and fill them halfway with cherry tomatoes. Peel the garlic, rinse it, and slice the cloves directly into the jar with the cherry tomatoes.

Place the washed parsley stems and sprinkle black peppercorns—not allspice, but regular black pepper! If desired, you can replace the parsley with celery stalks.

Fill the container with tomatoes to the top. Keep in mind that they will shrink a little after you pour boiling water over them the first and second time.

Bring water to a boil in a kettle or saucepan and pour it into the container until full. Cover with lids and let the tomatoes steam for about 5–8 minutes. Remember that they are small, so do not leave them in boiling water too long or they will split.

At this time, add the sugar and salt to the cauldron, pot, or saucepan. If desired, you can also add other spices and seasonings.

Drain the liquid from the cans of tomatoes into a pot. Add the vinegar and vegetable oil, place the pot on the stove, and bring the contents to a boil. Turn off the heat.

As you can see, the tomatoes have lost a little volume and have “settled” in the container, so you can add 1–2 more to each jar.

Fill the containers to the top with the prepared marinade, not forgetting to taste it. Immediately seal the jars with screw-on lids or using a jar wrench. Cool in the kitchen, then move to the pantry, basement, or cellar.
