
Pickled porcini mushrooms with vinegar
Description
Homemade preserves keep for a long time. I always make pickled porcini mushrooms with vinegar at home, and always using this recipe. There are many ways to pickle mushrooms, but I stick to my conservative choice, because this recipe has been tried and tested for years.

1. For marinating, it's best to use medium-sized mushrooms. If you have slightly larger ones, they will need to be chopped up, while small ones can be left whole.

2. I usually cut medium mushrooms into 4–6 pieces. They end up like this.

3. Next, put the mushrooms on to cook. Don't forget to add seasonings to the water: bay leaf, cloves, dry mustard, and black pepper. At the very end, pour in the vinegar, bring to a boil, and remove from the heat.

4. Pack our mushrooms into sterilized jars, pour in the marinade, and add one tablespoon of vegetable oil to each jar. Seal the jars and store them in the cellar.
