A simple way to prepare ahead. I cook these little mushrooms for about 3 hours, and my family loves to open them with any dish. For a festive table, this appetizer will also make a splendid addition, and guests will appreciate your culinary creations. Jars keep for up to a year in a cool place.

1. Cooking porcini mushrooms is a real pleasure, and their flavor is unmatched by any other mushroom. So, let's pick the finest-looking mushrooms.

2. Wash them thoroughly and cut them, then briefly soak in cold water. Cut them to medium size when you can; leave small ones whole.

3. Bring the water to a boil and add the mushrooms. Drain the first batch of water, refill, and cook the mushrooms for about 1.5 hours. Then rinse the mushrooms and drain them in a colander.

4. Now prepare the marinade: for one liter of water, one tablespoon of salt and one tablespoon of sugar. Bring to a boil. Add a bay leaf, peppercorns, and seasonings, then at the very end pour in one tablespoon of vinegar.

5. Pour brine over the mushrooms, add a tablespoon of vegetable oil to each jar, sterilize for about 20 minutes, and seal the jars. That's it!
