
Marinated porcini mushrooms
Description
A simple way to put up food for later. If you were lucky enough to gather porcini mushrooms, be sure to preserve them for winter. Porcini should be prepared right after picking, as they go wormy fairly quickly. Small, firm mushrooms are best for marinating, but with large ones you only need to trim off the stems and cut the caps into pieces. They make an excellent holiday appetizer or a simple lunch alongside hot potatoes. You can use them in salads or as filling for pies. Jars keep for up to a year in a cool place.

Prepare all the necessary ingredients for making pickled porcini mushrooms. Sort through the mushrooms, trim off stems that are too long, discard any that are wormy, and clean off debris. Rinse with cold water or wash thoroughly to remove dirt and sand.

Leave small porcini mushrooms whole; for large ones, cut off the caps and cut them into medium-sized pieces. It is best to use the stems in other dishes. Place the mushrooms in a pot and cover with water. Salt until the water is well salted. Set over medium heat and bring to a boil. Reduce the heat and simmer for 30 minutes, drain in a colander, rinse with cold water, and let drain completely completely.

While the water drains from the mushrooms, prepare the brine. Put the salt, sugar, pepper, bay leaf, and garlic in a saucepan. Add water. Bring everything to a boil and cook for 2 minutes.

Place the prepared porcini mushrooms and simmer over low heat for 15 minutes after the water comes to a boil.

Pour in the vinegar and cook for another 5 minutes.

While the mushrooms are cooking, prepare the jars and lids. Wash the jars and lids thoroughly with baking soda and rinse. Sterilize the jars using any convenient method; boil the lids for 5 minutes. Pack the mushrooms into the jars up to the shoulders, together with the brine; the brine should cover the mushrooms. Seal the jars tightly with the lids and turn them upside down. Wrap the jars and leave until completely cool, then store in a cool place.
