Marinated artichokes

Description

Artichokes are very tasty, nutritious, and healthy. They are low-calorie flower heads rich in vitamin C, magnesium, and fiber. To marinate them, clean them first. Imagine the artichoke as an unopened bud that needs to be “freed.” Trim the stem, then remove the film and with a knife cut off the upper petals down to the tender yellow part. This recipe is for a one-liter jar. As you cook, adjust the amount of ingredients by eye. Now you can start marinating the artichokes. 1. Cut the artichokes in half and immediately place them in a pot of water with lemon juice added. Cut artichokes darken like apples, which is why you need the lemon. Leave them in the pot with lemon for a while. 2. While the artichokes soak in the lemon water, bring water with vinegar to a boil. When the water boils, add bay leaf, salt, pepper, cloves, chili, and garlic. 3. Put the artichokes into the spiced marinade, bring to a boil, and simmer over medium heat for 5 minutes. 4. When the cooking time is up, drain the artichokes in a colander and leave them for a while so all the liquid runs off. 5. While the artichokes are draining off excess liquid, heat olive oil in a pot. Pack the artichokes into sterilized dry jars and cover with the heated oil. Seal tightly with sterile lids. Appetizing and delicious marinated artichokes are ready.
