
Marinated cod
Description
In the same way, you can prepare not only cod but also other types of white and red fish. This fish can be served as a standalone appetizer or used to prepare other dishes, for example, for sandwiches or salad. The appetizer is ready. Serve immediately.

Clean the fresh cod, then remove the head and tail, trim the fins, slit open the belly, and remove the entrails.

Thoroughly rinse the fish inside and out, preferably 2–3 times, then pat dry with paper towels.

Cut the fish into pieces about 2–3 centimeters thick and transfer it to a bowl.

Cover the cod with salt and leave it for 24 hours, then remove the fish, rinse it, and transfer it to a bowl.

Pour water into a pot—enough to cover the fish. Put the pot on the heat, add pepper, a bay leaf, a pinch of salt, and sugar.

Bring the water to a boil and pour it over the fish, then leave it again for a day.

After the required time has passed, drain the marinade and pat the fish dry with paper towels, brush each piece with olive oil, and store the fish in the refrigerator.
