
Marinated beets with onion
Description
The appetizer is quick and easy to prepare. An appetizer prepared this way can be stored in the refrigerator for no more than a week. To keep beetroot with onion for the winter, it needs to be canned. For spices, I use bay leaf, black peppercorns, and allspice. Want to vary the appetizer? Add a couple of cloves or a pinch of cinnamon. Either 9% table vinegar, apple cider vinegar, or rice vinegar will work. It can be served warm or chilled.

Prepare the ingredients. Boil or bake the beet in advance. Peel the onion and garlic.

Place the salt, sugar, bay leaf, allspice, and black pepper in a saucepan, pour in the water, and bring to a boil.

Remove the saucepan from the heat. Add the vinegar and thinly sliced onion.

Cut the beets in half, then into 5–6 mm thick slices. Slice the garlic into thin slices.

Place the beets and garlic in a suitable marinating container, pour the marinade with onion over them, mix, and refrigerate for 2 hours. During this time, stir the beets a couple of times.
