
Marinated mackerel with onion and tomato paste
Description
The appetizer is prepared quickly and easily. For making the marinade, you can use either concentrated tomato paste or passata, only you will need to slightly increase the amount of the latter. Sugar and vinegar can actually be adjusted to taste, and among the spices, add whatever you like. Coriander, bay leaf, cloves, and allspice work well for the marinade. The appetizer is ready. Serve immediately.

Prepare the necessary ingredients. The mackerel should be lightly salted. Clean and wash the onion.

Clean the mackerel, removing the innards. Cut off the head and tail. Carefully cut the fillets away from the backbone. Cut them into pieces about 2 centimeters each.

Bring 100 grams of water to a boil in a saucepan, dissolve the salt, sugar, and vinegar in it, add the tomato paste, bring to a boil again, and turn off the heat.

Add vegetable oil and ground pepper to taste. Add the onion to the marinade in half-rings, mix, and let cool.

Taste the cooled marinade; it should be slightly sweet with a light tang. Add the mackerel pieces and chopped dill to the cold marinade, stir gently, and refrigerate overnight.
