
Marinated carrots
Description
A winter preserve made at home. Peel the carrots and cut them into sticks. Boil a marinade of water, vinegar, and spices. Pour it over the carrots and let them steep for 24 hours. It's all simple and quick! Such a handy preserve will save a lot of time when making salads, appetizers, or side dishes, giving dishes a bright flavor, crisp texture, and a light tang. Serve at the table or store in the pantry.

Prepare the ingredients. Peel and wash the carrots. Sterilize the jars and lids for canning using a convenient method.

In a separate small bowl, place the cumin and freshly ground pepper, and add sugar.

Mix all these ingredients.

Pour water into a pot, add salt, and place over medium heat.

Cut the carrots into sticks.

Once the water in the pot comes to a boil, add the carrots and blanch them for 3–4 minutes in salted boiling water.

Using a skimmer, transfer the carrots onto a plate.

Pour the sugar-and-spice mixture into the remaining water in the pot, add the bay leaves and vinegar, and bring the marinade to a boil.

Meanwhile, pack the carrot sticks tightly into the sterilized jars.

Pour the boiling marinade over the carrots in the jars. Seal the jars tightly, turn them upside down, wrap them in a thick towel, and leave them like that overnight.

Then you can put the finished preparation into storage. If desired, you can take the first sample as early as after one day.
