
Pickled Cabbage with Citric Acid for Winter
Description
A winter preserve made at home. From the amount of ingredients listed, I get about 3 half-liter (0.5 L) jars. Ready marinated cabbage can be used in many ways. Besides eating it as is, you can make tasty salads with it or serve it with meat dishes as a light vegetable side. Good luck. Serve at the table or keep it in the pantry.

Wash the cabbage and break it into florets.

Pour a liter of water over the cabbage, add a pinch of citric acid and 1 tbsp. salt.

Bring the cabbage to a boil, then cook for another 5 minutes. Drain the hot water and pour cold water over the cabbage.

Place bay leaves and peppercorns in sterilized jars.

Pack the cabbage tightly.

Mix a liter of water with salt, sugar, and vinegar. Bring the marinade to a boil and pour it over the cabbage. Seal the jars with lids and turn them upside down until completely cool. Store in a cool place.
