
Marinated anchovies
Description
Perfect with the table and with drinks. To marinate anchovies, you first need to prepare a marinade from water, salt, sugar, and spices, and let it cool. If you don’t like a spicy marinade, then don’t add pepper and bay leaf at all—the fish will be just as tasty. It can be served warm or chilled.

Prepare all the necessary ingredients. Buy whole anchovies with intact bellies, shiny, silvery skin and scales. You do not need to wash them before salting.

In a convenient sauté pan or small saucepan, pour in the water, add a heaping tablespoon of salt, sugar, whole peppercorns, and a bay leaf. Place the pan on the heat.

As soon as the water comes to a boil, stir it with a spoon until the salt and sugar crystals have completely dissolved. Pour in the vinegar and cool the marinade. The fastest way to do this is to place the saucepan in a large container of cold water.

Place the anchovies in the cooled marinade, gently mix with the back of a spoon, and leave the fish for at least 2 hours. After this time, small anchovies will already be well marinated; larger ones will be ready in 4–5 hours.

You can clean the fish by removing the head, entrails, and backbone, and make delicious sandwiches with white bread and butter.

Alternatively, you can drain the marinade, discard the spices, arrange the anchovies on a flat plate, and serve them that way. The marinated anchovies are ready to serve.
