
Pickled Beans for Winter
Description
A simple way to prepare ahead. Here is a very good and simple recipe for making marinated beans for winter. We use the simplest and most accessible ingredients: beans, sweet pepper, tomatoes, carrots, salt, sugar, vinegar, and vegetable oil. Soak the beans overnight in cold water beforehand. The finished canned beans will be not only a tasty side dish but also a great addition to soup or sauce. Have a nice day. Store in a cool, dark place.

Soak the beans in cold water. It's best to do this overnight.

In the morning, when the beans have absorbed all the water, drain off the excess, rinse under running water, and put the beans on to cook.

Boil the beans for 40–45 minutes. While they are cooking, run the tomatoes through a meat grinder and dice the carrots and bell pepper.

Prepare salt, vinegar, vegetable oil, and sugar.

After 40 minutes, when the beans are almost cooked, add the prepared vegetables to the pot. Then add salt, sugar, and vegetable oil. Cook for half an hour.

Prepare sterile jars for canning; scald the lids with boiling water.

After half an hour of cooking, taste the contents of the pot; if everything is sufficient, pour in the vinegar and remove the pot from the heat. Seal the hot beans in jars, turn the jars upside down, and wrap them in a blanket. The preserves can be eaten once the jars have cooled.
