Description

Perfect for stocking up for winter. This simple recipe for pickled cauliflower for winter in jars will help you make the cauliflower delicious and juicy. In my view, though bland on its own, it soaks up the marinade wonderfully, and if there are tomatoes too for extra juiciness—the salad is beyond all praise.

Instructions

    Step 1

    1. Wash the cabbage and tomatoes and let the water drain off. Break the cabbage into florets and cut the tomatoes into medium-sized pieces. Pack tightly into the jar, alternating tomatoes and cabbage.

    2. Pour in boiling water, cover with a sterile lid (but do not screw it on), and let stand for half an hour.

    3. During this time, the vegetables will settle. Drain the water, and you can fill the remaining space with garlic, currant leaves, pepper — everything you usually add to the marinade. On the stove, bring the water with salt, sugar, and vinegar to a boil. Stir and fill the jars to the brim.

    4. Seal the jars with sterile lids and store them upside down, wrapped in blankets, until completely cooled. When cool, move them to the cellar for winter storage. Done!
