
Marinade for grilled fish
Description
Recipe for homemade sauce. To properly prepare the marinade, mix all ingredients in a sealed container and shake well until they combine or, as they say, "marry" together. Pour the marinade over fish and let it marinate for at least half an hour, though you can marinate longer if desired. Add achiote or annatto to the marinade—these are Mexican spices. If you don't have them, substitute saffron and pepper. In cooking, flavor alternatives can almost always be found. And making marinade is such a personal, individual process! This sauce is perfect served with pasta, meat, and vegetables.

Combine all ingredients, mince the garlic. Mix the marinade and let it sit for 5 minutes.
