
Rabbit marinade
Description
Minimal ingredients — excellent result. This simple marinade recipe for rabbit doesn't take much time. The ingredients used are spicy with a pronounced flavor. Dried herbs give the marinade a special aroma. Depending on your choice, it can have notes of Provencal herbs or tarragon. Garlic is essential, as it's always used when preparing rabbit. The finished sauce can be stored in the refrigerator for several days.

1. Peel the onion and slice it thinly into half-rings. Take a hot red pepper. Carefully slice a few rings, making sure no seeds remain.

2. Place a couple of bay leaves, cloves, and various types of pepper—black, pink, green, white, allspice—into a glass. Pour warm water over the spices. Let them steep in the warm water.

3. Take a small bowl. Pour in some vegetable oil. Then add balsamic vinegar to the oil (enough for 2 tablespoons).

4. Mix the oil with balsamic vinegar. Then add onion half-rings and chopped chili pepper to this bowl. Crush the garlic using a press or grate finely. Add to the other ingredients. Mix well.

5. Take dried herbs of your choice and add them to the marinade. This can be tarragon and mint, basil, rosemary, or a mixture of Provencal herbs.

6. After all the ingredients are mixed and the dried herbs are added, pour a glass of warm water together with the spices into the marinade. Mix thoroughly once again and let it sit for a while to allow the herb aroma to develop further. Proceed to marinate the rabbit (for at least 2 hours), then roast it.
