
**Marinade for Smoking Fish**
Description
The recipe won't take much time. The most common marinade is soy sauce; it gives the fish a pleasant flavor and a beautiful color. You can use salmon, Atlantic salmon, chum salmon, or other types of red fish. You can leave the fish as one large piece or cut it into portions. Allow yourself time and patience—the whole process takes about 1 day.

1. In a bowl, mix sugar, salt, soy sauce, water, dry white wine, onion and garlic powder, and Tabasco sauce. Wash the boneless fish and place it in a deep dish; pour the marinade over it. Refrigerate for 8 hours.

2. Spread out foil and place a rack on it. After 8 hours, remove the fish from the marinade and place it on the rack; leave for another 4 hours so a thin film forms.

3. Place the tray with the fish in the smoker and pour a little water into the bottom pan. Once smoke appears, smoke the fish for 2 hours at 100 degrees, then for 2 hours at 140 degrees and 2 hours at 175 degrees. Each time you raise the temperature, baste the fish with the marinade. Remove the fish from the smoker and let it rest for 1 hour.

4. Wrap the prepared fish in foil or plastic wrap, cut it into pieces, and place it in a container. Store it in the refrigerator for 8–10 days.
