Marzipan mass

Description

Marzipan paste is often used to decorate cakes instead of fondant. Unlike fondant, this paste is more pliable, easier to work with, and doesn't need to be kneaded for as long. You can make candies from marzipan paste, and it can also be colored with food coloring.

    Step 1

    Soak bitter almonds in a glass of plain water, leave for 12 hours, then remove and peel off the skin. Split them into two halves and soak again for another 12–24 hours at room temperature. Change the water every 8 hours.

    Pour water into a saucepan and add sugar. Place the saucepan over heat and cook until the sugar crystals are completely dissolved. Let it cool to room temperature.

    Pour 1.5 liters of water into a large saucepan, bring to a boil, then add the sweet almonds and cook for 2 minutes.

    Drain it in a colander and rinse with cold water. Peel the cooled almonds and transfer them to a towel. Leave for 1 hour to dry completely.

    Transfer the cooled and peeled almonds in portions to a coffee grinder, grind until they turn into flour. Add bitter almonds to one of the portions.

    Add 4 tablespoons of syrup to the ground almonds and mash with a spoon. Add syrup gradually until the marzipan mixture is no longer crumbly and holds together.

    If you do not plan to use the mixture immediately, store it in the refrigerator for about 3 weeks.
