For everyone, marzipan is associated with childhood, something incredibly delicious, expensive, and foreign. And indeed, marzipan originates from Italy. In our country, marzipan is rare, but that's no reason to give up this treat.

    Italians created marzipan in a year when wheat flour was in short supply. They ground almonds, mixed them with water, and obtained a unique kind of dough. That's how the world discovered this wonderful treat. For our marzipan, almonds are the main ingredient. You can use lower-quality almonds, since the kernels will need to be ground later anyway.

    First, you need to blanch the almonds. To do this, place the almonds in boiling water and cook for several minutes until the skins begin to separate from the kernels. Then cool the almonds by draining them in a colander and remove the skins by hand.

    Now, prepare the syrup from water and sugar. Bring it to a boil over medium heat, stirring occasionally, and boil for about 30 seconds. Turn off the heat and cool to room temperature.

    Place the almonds in a food processor or blender and grind until they turn into flour. Without turning off the appliance, carefully add the powdered sugar, and once the mixture is combined, pour in the sugar syrup. As a result, you'll get a kind of marzipan dough.

    The resulting product can be stored in the refrigerator, wrapped in plastic wrap, for at least 3 weeks. Marzipan dough is used to make cake and candy decorations, as well as the famous marzipan figurines. Color small marzipan balls with juice from herbs, carrots, beets, cherries, or blueberries (you can use food coloring), knead until the color is uniform, and use them for culinary masterpieces—here, only your imagination can set the limits.
