Instructions

Step 1

For the filling of the buns, you will need homemade cottage cheese, boiled eggs, salt, and fresh herbs. I love the combination of cottage cheese with dill. Let's get started!

Step 2

First, you need to make dough for the buns. To do this, pour 2 cups of flour into a deep bowl, mix it with baking powder and salt, and make a well in the center. Pour in the refined oil and buttermilk.
- 3
Step 3

Knead the dough. You may need approximately 2.5 cups of flour. Do not make the dough too stiff. Cover it with plastic wrap and let it rest for 15–20 minutes.

Step 4

While the dough is resting, prepare the filling. Mix chopped boiled eggs with dill and cottage cheese. Season the filling slightly with salt. You can add a pinch of ground black pepper. Mix well.
- 5
Step 5

Divide the dough into 8 equal parts. Roll each part out thinly, like for chebureki. Place the filling on the edge.
- 6
Step 6

Cover with the second half of the dough, seal the edges well; a fork is convenient and creates a nice, decorative edge.
- 7
Step 7

Heat the oil in a skillet; it should reach halfway up the turnover (at least). It's better to fry the turnovers in deep fat. I added more oil and just fried them in a skillet. Turn the turnovers periodically until a golden crust forms.

Step 8

Manzari are ready! I got 8 pieces.
