Tajik-style dumplings with pumpkin

Description

Choose sweet varieties of pumpkin. Add sugar to taste. If your pumpkin is not sweet, add more sugar. In this recipe, I'm again using choux pastry. It rolls out thinly, doesn't tear, and doesn't spread during steaming. That's this simple recipe.

    Peel the pumpkin and cut it into small cubes, 0.5x0.5 cm.

    Heat the oil in a skillet, add the pumpkin, sugar, and cinnamon. Sauté the pumpkin for a couple of minutes until the sugar dissolves, stirring occasionally. The pumpkin should not become soft—only slightly infused with sugar. Remove the pumpkin from the heat and let it cool.

    While the filling is cooling, prepare the dough. Mix boiling water with salt and 3 tablespoons of vegetable oil. Add 1 cup of flour and stir well with a fork.

    Let it cool slightly until it's warm to the touch. Add 1 cup of flour and knead into a soft, elastic dough. Cover with a bowl and let rest for 5 minutes.

    Divide the dough into three parts. Roll one part into a thin sheet. Cut it into equal squares and place the filling in the center of each square.

    Pinch the opposite edges of the square alternately from two sides. Join the opposite tips together. Leave the edges with small holes, do not seal them, so that the pumpkin steams well during cooking but doesn't turn into mush.

    Turn on the multicooker in "Steam" mode for 10 minutes. Pour a glass of hot water into the bowl. Grease the steaming basket with vegetable oil and place the manty on it. Close the lid and wait for the beep signal. You can then load the next batch.
