Description

The dish is prepared without unnecessary complications. Serve the manty hot with sauces—tomato sauce or adjika, garlic sauce, and sour cream are excellent choices. I prefer the dough made with egg, as it is noticeably better than dough made with just water. Steam the beef manty for at least 40–45 minutes. The manty turn out juicy and very aromatic. I've described the entire cooking process in detail—see the recipe. The ready dish can now be served.

    Prepare the ingredients. Let's get started!

    Cut the beef into small pieces and pass through a meat grinder.

    Peel the onion and finely chop it with a knife. Do not grind the onion in a meat grinder, as it will release too much juice and make the stuffing bitter.

    Add chopped herbs, salt, and spices (in equal proportions, I used ground black pepper, coriander, and cumin).

    Mix the meat thoroughly, cover with plastic wrap, and set aside for now.

    Sift the flour into a bowl, add salt, mix, and make a well in the center. Pour in the water and add the egg. Start mixing the dough with a spoon; once the flour is moistened, transfer it to the work surface.

    Knead the dough until it is dense and elastic.

    Cut off a portion of the dough, place the rest in a bag to prevent it from drying out. Roll it out thinly and cut into 10 by 10 cm squares.

    Place the filling in the center of each square, then top with a piece of butter.

    Connect two opposite corners.

    Now connect the remaining two corners to form an envelope shape.

    On the other two sides, gently pull the dough slightly and pinch it together; this will form a little flower shape.

    Repeat. I got 28 pieces. The manty are shaped, ready to cook.

    I don't have a manty steamer, so I cook manty in a steamer—same principle. Grease the bottom with vegetable oil and place the manty at a distance from each other. Stack the tiers on top of one another and set the timer for 45 minutes.

    The manty are ready! Melt a small piece of butter and pour it over the manty or brush them with a silicone brush.
