
Mansaf
Description
The recipe won't take much time. Mansaf is a dish from Jordanian cuisine, traditionally prepared for festive occasions—mainly weddings, religious holidays, and funerals. Traditionally, mansaf is made with lamb or beef, but chicken also works perfectly well for this dish. You can use any nuts: almonds, cashews, pine nuts, or peanuts. It is usually cooked over an open fire in large pots, as this dish is meant to be shared with guests, neighbors, or even passersby. Typically, the dish is served on a large platter, the meat is cut into big pieces and generously covered with sauce. Mansaf is eaten with hands. Today I'm sharing the recipe. Serve hot.

Wash the chicken and cut it into large pieces. I used legs and wings. Place in a frying pan and brown.

Cook the rice in salted water until done. It should turn out fluffy.

For the sauce, mix kefir with sour cream.

Transfer everything to a saucepan and place on the stove. Bring to a boil and add the curry. Simmer over low heat for about 10 minutes.

Now we will start assembling our mansaf. I will do this in portions. Place the rice in a deep plate.

Place a piece of chicken on top.

And pour the sauce over everything generously. There should be plenty of sauce, as the rice absorbs it very well and becomes very juicy.

Sprinkle with roasted peanuts and herbs. Serve the dish hot.
