
Lemon Semolina Cake
Description
Homemade baked goods for tea. This cake can be decorated with lemon slices or whipped cream. I decided to stick to the classic version. It can be served with tea or coffee.

Prepare all the ingredients. Wash the lemons. Sift the flour.

In a dish, mix sugar, semolina, and kefir. Stir well, breaking up any lumps of semolina. Let it sit in a warm place for 20–30 minutes, during which the semolina will absorb the liquid and swell.

Melt the butter in a double boiler. Beat the eggs into a bowl. Mix the eggs with the melted butter, then slowly pour the mixture into the semolina, stirring until the dough becomes smooth and uniform.

Add lemon zest and lemon juice to the dough, mix the mass.

Add baking powder, baking soda (activated with vinegar), and flour to the dough. Mix well, making sure to break up all lumps. The dough should have the consistency of thin sour cream.

Pour the dough onto a baking sheet, previously greased with oil. Let the dough rest for 20-30 minutes at room temperature.

Bake the semolina cake in an oven preheated to 180 degrees for about 30-40 minutes. Cut the cake only after it has completely cooled down.
