
Forest Berry Semolina Cake

Semolina cake (manna cake) appeared in Russia in the 13th century, and since then a great number of recipes have emerged, for example, with sour cream, kefir, berries, apples, etc. Try preparing semolina cake with forest berries. The baked goods are ready. Serve at the table.

1. Place the sour cream in a bowl. Put the baking soda in a cup and extinguish it with vinegar. Add the activated baking soda to the bowl with sour cream and mix thoroughly.

2. Break the eggs and thoroughly mix with sugar until a uniform consistency is achieved.

3. Gradually add the semolina in a thin stream, continuing to stir. Mix the entire mixture until smooth and uniform in consistency.

4. Grease a baking sheet or baking pan with vegetable oil and lightly sprinkle with semolina. Place blueberries and cranberries onto the baking sheet or into the pan.

5. Pour the prepared semolina mixture over the berries, carefully smooth it out. Bake the semolina cake at 200 degrees until a golden crust forms. Check the doneness with a knife—the knife inserted into the center of the cake should come out clean. If there is any batter on the knife, return the cake to the oven to continue baking. Let the semolina cake cool completely to room temperature, then cut into pieces and serve.
