Semolina Cake without Flour
Description
Delicious baked treat for the whole family. This simple flourless semolina cake recipe likely belongs to the type of recipes where the final dish was "made from whatever was on hand" — but believe me, this cake is no less tasty because of it! On the contrary, semolina and dishes made from it are generally considered much healthier than similar baked goods made with flour. So, let's get started. Serve with tea or coffee.
Instructions
- 1
Step 1
First, rinse the grain if necessary, then pour kefir over it. Let it soak well; the longer you let it soak (if time allows), the more tender the pie will turn out.
- 2
Step 2
Melt the butter in a water bath or using a microwave, then mix it with sugar until the sugar dissolves at least partially.
- 3
Step 3
Add this liquid mixture to the semolina with kefir, and mix thoroughly, adding vanilla.
- 4
Step 4
Beat the eggs with a whisk by hand or using a blender, then gently mix into the dough.
- 5
Step 5
The batter should be smooth, without lumps, and sufficiently liquid. Pour it into a baking dish (by the way, it's also a good idea to sprinkle the edges of the dish with semolina to help the pudding easily detach from the sides later).
- 6
Step 6
Place in a preheated oven at 180 degrees for half an hour.
- 7
Step 7
That's it! The best way to check for doneness is with a toothpick, but be careful—the cake should turn out quite crumbly and tender, so don't accidentally damage its structure :)
