
Semolina casserole
Description
Perfect with tea and coffee. Semolina casserole is easy to prepare; it's a pity this dish is now rare in family menus. To vary the flavor, you can make the semolina casserole with or without cottage cheese, with a lemon flavor, or by adding raisins, nuts, or candied fruits. Instead of raspberries, you can use blackberries, strawberries, or a mix of all these berries. Serve warm or chilled. Ideal with tea.

Wash and dry the orange, then peel off the zest in strips, being careful not to include the white pith.

Put the removed zest into cold milk, then add the semolina.

Place the pot over heat and cook the semolina for 15-20 minutes, stirring constantly.

At the end of cooking, you will have semolina porridge. Remove the orange zest and let the porridge cool to room temperature.

Add yogurt, soft butter, and eggs (previously beaten with sugar) to the cooled semolina porridge. Mix everything thoroughly.

Preheat the oven to 200 degrees. Line the baking pan with parchment paper.

Place 2/3 of the semolina mixture into a baking dish, then add 2/3 of the raspberries, and top with the remaining semolina mixture. Smooth the surface of the casserole and bake for 35–40 minutes until golden brown.

Let the finished casserole cool in the pan, then transfer it to a serving dish and decorate with the remaining raspberries.
