
Mom's Casserole
Description
To make “Mom’s” casserole you won’t need a large budget, and most importantly—it turns out hearty and tasty. Not all children like cottage cheese in its natural form, but when baked it usually goes over well. I make this casserole for my kids; you make it too, you won’t regret it. Serve warm or chilled. Perfect with tea.

Prepare all the ingredients.

Parboil the rice until it is partially cooked.

Cottage cheese, thoroughly mash it with a fork. For a more delicate taste, I prefer to puree it with a blender until smooth.

Combine the cottage cheese and boiled rice. Mix.

Add sugar, baking soda, and eggs.

Place pieces of butter on the bottom of the pan.

Spread the cottage cheese‑rice mixture evenly on top. Bake in the oven at 180 °C for 25 minutes. Check doneness with a toothpick, and be careful not to overbake the casserole so it doesn’t lose its tenderness.

Mom's casserole is ready. Slice it into portions and serve at the table with sour cream or any jam.
