
Mom's Ajika
Description
A delicious addition to everyday and festive dishes. You can prepare this ajika for winter by simply pouring it into sterile jars and sealing them tightly with sterile lids. I love ajika—it goes well with meat, potatoes, vegetables, and various dishes. This version of ajika is made with apples. It turns out absolutely excellent and is perfect with pasta, meat, and vegetables.

Prepare the ingredients.

Peel the carrots, onion, and apples. Chop the vegetables in any way you like.

Pass all the ingredients through a meat grinder with a fine grid—pepper, tomatoes, onions, carrots, apples.

Add sugar and salt to the resulting mass.

Add hot pepper and oil.

Simmer the adjika for 2 hours over low heat.

Add garlic, cook for 15-20 minutes, then add vinegar, bring to a boil and turn off the heat. Cool the adjika and serve.
