1. Bring the water to a boil with salt and spices, then reduce the heat and gradually add the grain in a thin stream. Stir quickly to prevent lumps from forming.

2. Simmer over very low heat for about half an hour, covered. Then, carefully use a wet spatula to scrape some of the porridge from the sides, mix it in, and now add the grated cheese. Stir well. The mixture will become thick and sticky; let it sit for another 10 minutes.

3. Now turn off the heat and let it sit for about 15–20 minutes, cooling slightly. With one swift motion, flip the pot over—and the mamaliga will come out right into your hands! Slice it and serve at once!
