Quick Lightly Salted Tomatoes
Description
Homemade preserves keep for a long time. Quick lightly salted tomatoes are eaten as a light snack and served as a side with hot meat and vegetable dishes, among other uses. If you prefer a stronger salty taste, I recommend keeping the tomatoes longer than 24 hours. The ingredients are for one 1-liter jar. Store in a cool, dark place.

Prepare the brine. To do this, add salt, sugar, a bay leaf, black pepper, and allspice to the water. Bring to a boil and simmer for a minute or two. Remove from the heat and add the vinegar. Stir. Pour the hot brine over the tomatoes in the jars. Wait until the brine cools, then put the jar in the refrigerator.
