Lightly Salted Cucumbers in a Bag

Description

A winter preserve made at home. The appetizer is ready in literally 20 minutes. Salt draws juice from the sliced cucumbers, and then the slices marinate in their own brine, as if in their own juice. Fresh dill gives the dish a distinctive flavor. You can add fresh parsley, arugula, celery, and so on. If you like, you can prepare the appetizer, tie it in a bag, and take it with you on a trip, to work, or on a picnic. Jars keep for up to a year in a cool place.

    Prepare the specified cucumbers, salt, and dill. Rinse the cucumbers in water, thoroughly washing off the spines and dust from the surface of the vegetables.

    Trim the ends off the cucumbers and cut them into sticks. Place them in a deep container or directly into a bag.

    Rinse the dill or parsley, chop it, and add to the sliced cucumbers.

    Pour in the salt, but not iodized—use regular salt, coarse or fine grind. At this stage you can add peeled and chopped garlic, about 1–2 cloves, if you like your snack with a garlicky aroma.

    Place everything in a sturdy bag if you gathered all the ingredients in a container rather than directly in the bag.

    Carefully tie the bag, releasing the air, and mix the ingredients inside together with your hands, being careful not to tear the bag. Place the bag with cucumber slices in the refrigerator for 20 minutes.

    After the specified time has elapsed, untie the bag and transfer its contents to a plate, pouring off any liquid that has formed. Serve the lightly salted cucumbers.
